The ALIMENTE21 proposal aligns with advancing the industrial food sector toward a model of predictive, prescriptive, and intelligent management of resources, processes, and products, moving toward augmented and autonomous intelligence to reduce the environmental impact of the industry. ALIMENTE21 will enhance the availability and efficiency of resources, both industrial and raw materials, and/or production processes within the food industry and its multiple links in the value chain, while simultaneously ensuring the safety and quality of production processes. ALIMENTE21 will explore digital enabling technologies such as AI (Machine Learning, Deep Learning, Optimization, among others), Big Data, Edge Computing, and Digital Twin. It is worth emphasizing that AI represents the most significant change expected from digital technologies, offering the ability to analyze data intelligently in unprecedented waysrecognizing complex patterns and using them to develop predictive and prescriptive capabilities..
